This is the cradle of the long-standing traditional noodle making profession, not only contributing to preserving cultural identity but also playing an important role in economic development and building new rural areas in the locality.

“Luc Ngan Rice Noodles” is a typical product of Hang Hieu Agricultural Service Cooperative (Trung Nghia residential group, Chu town, Luc Ngan district, Bac Giang province). Established in 2020, the cooperative’s management board has worked with its members to build and develop the consumption market, making Luc Ngan Rice Noodles a prestigious and quality brand.
The main ingredient of the product is Bao Thai Hong rice, large, round, fragrant rice grains. After harvesting, the rice is picked clean, cleaned, washed thoroughly and then soaked in a jar for 6 to 8 hours. After that, the rice is ground with a green stone mortar into a fine, viscous powder, filtered many times and left to ferment overnight to achieve the characteristic adhesion and flavor. The powder is then used to make cakes and dried in the sun. When the cakes are dry, people cut them into even sheets, then cut them into straight, beautiful noodles.

Ms. Luc Thi Loan - Director of Hang Hieu Agricultural Service Cooperative shared: “The cooperative has invested in advanced machinery and equipment in the stages of milling flour, mixing raw materials and creating noodles, helping to improve production efficiency and uniform product quality. To perfect the product, we have built a closed production process, from input materials to finished products, combined with a hygienic production area, meeting food safety and hygiene standards”. The special feature of Luc Ngan Rice Noodles lies in the characteristic fragrant and sticky flavor of Bao Thai Hong rice, combined with the traditional technique of milling flour with a stone mortar, creating each strand of white, naturally soft and chewy noodles without the need for additives.
Luc Ngan rice noodles are processed into stir-fried dishes, hot pot dishes, etc. to suit the needs of consumers. Ms. Loan added that Hang Hieu Agricultural Service Cooperative has proactively registered trademarks, QR codes for traceability, designed eye-catching packaging, invested in sales lines, and digital transformation to increase productivity while still maintaining traditional quality. Thanks to that, each month the Cooperative provides the market with quality products, creating stable jobs for regular workers, with an income of 7-8 million VND/person/month.

Not only a traditional product, Luc Ngan rice noodles are gradually asserting their position thanks to stable quality, beautiful design and standard production process. The product has reached many provinces and cities such as Hanoi, Hai Phong, Quang Ninh... through fairs, supermarkets, specialty stores and e-commerce channels, widely reaching consumers.
Thanks to the initiative in organizing production and building brands of cooperative members, along with the active support and companionship from local authorities and related departments and branches, Luc Ngan Rice Noodles have been recognized as a quality agricultural product. In 2021, the product achieved the provincial 4-star OCOP standard and will continue to maintain this level in 2024, affirming steady progress in quality and brand.
“In the coming time, we aim to both preserve tradition and promote the application of science and technology to expand production scale. The goal is to provide clean, safe products with strong local identity for the domestic market and gradually reach out to the international market,” Ms. Loan added.

Luc Ngan rice noodles are not simply an agricultural product but are gradually becoming a driving force for rural economic development, contributing to realizing the goal of building a sustainable new countryside rich in the identity of Luc Ngan land.
